What are the advantages/disadvantages to these two set ups?

I will be running two 300 watt Pioneer 6 1/2" speakers, and 2 600 watt Pioneer sub-woofers. This will be accompanied by a Pioneer 200/watt CD/WMA/MP3 player. The two 6 1/2" speakers are 4 ways. I want to know if it's better if I use a 2 channel amplifier (760 watts) or a 4 channel (760 watt) amplifier. I don't need ear drum busting sound, I just want good quality sound.
