Which one is used by default on Cisco routers' interface - IEEE 802.3 or Ethernet?Can we change this setting?

802.3 is the standard for Ethernet. There would be no point in changing the setting unless you plan to remove the 8p8c modular sockets and solder some other form of connection in place. No, you can't change the setting that I am aware of.
